100% Arabica coffee - Single Origin
The famous Harrar from Ethiopia: it should be remembered that Ethiopia is the cradle of coffee and that the coffee tree is still endemic in this country. The country is huge, the climate and the altitudes are so different that the major appellations, Harrar, Sidamo, Guji, Yrgachef, jimma.... give very different coffees from each other!
This coffee comes from the region of Mount Kundudo which is located east of the city of Harar. The coffee trees grow on plateaus with an average altitude of 2000m. Harvesting is manual. I chose a Harrar from the sun-dried Mocha variety. Pulping is done by leaving the cherries to dry in the sun for 10 to 15 days, then manual sorting will keep the grain that will be exported.
This coffee has a rather strong intensity, very aromatic with notes of milk chocolate, tobacco, spices.
It is very creamy in espresso preparation!
